This recipe came from Sue Cook’s “What DO You Eat?”
Ingredients
- 175g plain self raising wholemeal flour
- 175g plain self raising plain white flour
- 6 dsp cocoa powder
- 220ml maple syrup
- 2 tsp vanilla
- 120ml Sunflower Oil
- 450ml soya milk
Method
- Preheat oven to Gas Mark 4 or equivalent
- Sieve together flours and cocoa powder into mixing bowl
- In a jug, whisk together the oil, maple syrup, soya milk and vanilla essence
- Pour this mixture into the dry ingredients and beat well until smooth.
- Grease two 8-inch cake tins, then tap a little flour around each
- Ladle equal amounts of the cake mixture in to each tin.
- Bake in oven for 40 minutes or until a skewer comes out dry
- Once cool, you may want to slice to top of one part to make it flat
- Cover each part with chocolate icing and join together to make a sandwich. The icing can be made by whisking 75g of vegan marg, then adding a well sieved mixture of 60g cocoa powder and 75g icing sugar. Once mixture has come together add around half a teaspoon of hot water or thereabouts to get the right consistency
