Vegan Chocolate Cake

This recipe came from Sue Cook’s “What DO You Eat?”

Ingredients

  • 175g plain self raising wholemeal flour
  • 175g plain self raising plain white flour
  • 6 dsp cocoa powder
  • 220ml maple syrup
  • 2 tsp vanilla
  • 120ml Sunflower Oil
  • 450ml soya milk

Method

  1. Preheat oven to Gas Mark 4 or equivalent
  2. Sieve together flours and cocoa powder into mixing bowl
  3. In a jug, whisk together the oil, maple syrup, soya milk and vanilla essence
  4. Pour this mixture into the dry ingredients and beat well until smooth.
  5. Grease two 8-inch cake tins, then tap a little flour around each
  6. Ladle equal amounts of the cake mixture in to each tin.
  7. Bake in oven for 40 minutes or until a skewer comes out dry
  8. Once cool, you may want to slice to top of one part to make it flat
  9. Cover each part with chocolate icing and join together to make a sandwich. The icing can be made by whisking 75g of vegan marg, then adding a well sieved mixture of 60g cocoa powder and 75g icing sugar. Once mixture has come together add around half a teaspoon of hot water or thereabouts to get the right consistency
