This has been a staple favourite of mine if I’m entertaining as it works well as a party buffet snack (chopped in quarters) or as part of a main meal served with rice and salad. These are dead easy (a food processor is required) to prepare and turn out extremely tasty.
Ingredients
- 1 tin of chick peas, drained
- 1 red pepper
- 1 tbsp tahini
- juice of half a lemon
- 8 large flour tortillas
- medium-sized piece of broccoli
- optional extras: salsa or cheese
- Wash and chop the broccoli (relatively small) and steam for 5-10mins
- Prepare the pepper and chop into large chunks – roast in the oven for 10mins at 200°C
- Add chickpeas, tahini, lemon juice and roasted peppers to food processor and whizz until smooth
- Empty the filling mixture into a container and divide into eight portions for each burrito
- Spoon the mixture into the centre of a tortilla, add a piece of broccoli and your optional extras and fold in the standard burrito fashion
- Heat the burritos in the oven for 5-10mins at 180°C
