Broccoli Burritos with chickpea and roasted pepper filling

This has been a staple favourite of mine if I’m entertaining as it works well as a party buffet snack (chopped in quarters) or as part of a main meal served with rice and salad. These are dead easy (a food processor is required) to prepare and turn out extremely tasty.

Ingredients

  • 1 tin of chick peas, drained
  • 1 red pepper
  • 1 tbsp tahini
  • juice of half a lemon
  • 8 large flour tortillas
  • medium-sized piece of broccoli
  • optional extras: salsa or cheese
Method
  1. Wash and chop the broccoli (relatively small) and steam for 5-10mins
  2. Prepare the pepper and chop into large chunks – roast in the oven for 10mins at 200°C
  3. Add chickpeas, tahini, lemon juice and roasted peppers to food processor and whizz until smooth
  4. Empty the filling mixture into a container and divide into eight portions for each burrito
  5. Spoon the mixture into the centre of a tortilla, add a piece of broccoli and your optional extras and fold in the standard burrito fashion
  6. Heat the burritos in the oven for 5-10mins at 180°C
